Who doesn’t love pesto on their freshly caught fish? Easy to make, this is a Skippers’ fave because it goes with just about everything.

Rocket Pesto with Fresh Fish

Ingredients

• 1 x 120g packet of baby rocket
• small bunch basil leaves
• ⅓ cup toasted pine nuts
• ⅔ cup extra virgin olive oil
• 50g grated parmesan cheese, plus extra to serve
• 3 tbsp lemon juice and 1 teaspoon zest
• 3 cloves garlic, peeled and whole
• Sea salt and cracked pepper to taste

Toast the garlic with the pine nuts. Then, blend all ingredients until smooth. Serve with your favourite fish and fresh salad.
